Red Pepper Hummus

  • Red Pepper Hummus

1 can of chick peas, drained and rinsed
2 cloves of garlic, put through a press
Juice of one lemon or to taste
1 teaspoon ground cumin
One-half cup roasted red peppers, chopped
A drizzle of extra virgin olive oil for garnish
Sea salt and fresh ground pepper to taste

In a food processor, combine all ingredients and puree until smooth.  Adjust seasoning if desired. Serve with blanched broccoli florets, carrots with stem on, cherry tomatos
