Spring Onion Jalapeno Jasmine Rice Cakes

5 spring onions

1 celery rib

1 piece green garlic


1 teapspoon salt

Freshly ground pepper

2 cups cooked jasmine rice

2 large eggs, lightly beaten

1 cup bread crumbs

Finely chop onions, garlic and celery.  In a skillet add vegetables and two tablespoons oil.  Cook vegetables until softened.  Stir together rice, eggs, breadcrumbs and vegetable mixture.  Form into desired rounds.  Cook in skillet with 2 tbsp oil until browned.  Repeat on other side.
