Asian Coleslaw with Ginger Vinaigrette

5 pounds coleslaw salad mix
4 cups coarsely chopped cilantro
3 cups Ginger Vinaigrette
1/2 cup chopped chives for garnish
Salt & pepper to taste

For additional color, add shredded purple cabbage and shredded carrots. Toss above ingredients in large bowl.  Garnish with chopped chives.
