Yellowtail with Pineapple Salsa

Yellowtail Ingredients:
1 each 7oz portion fresh yellowtail
1/2 teaspoon kosher salt 
1/2 teaspoon fresh cracked black pepper

Pineapple Salsa Ingredients:
1 whole pineapple, peeled and sliced into 1/4"slices
1 small red onion, peeled and sliced thick for grilling (1")
1 red bell pepper
1 jalapeno pepper 
1/4 cup chopped cilantro
salt & pepper to taste

White Bean-Arugula Salad Ingredients:
1/2 cup cooked cannellini beans
2 tablespoon pickled red onions
1 teaspoon pickled red onion juice
1 oz fresh wild arugula
Pinch of salt & pepper 
1/2  oz house vinaigrette

Season yellowtail with salt & pepper on both sides and place on hot grill. Grill to medium as overcooking will lead to a dry finished product. While fish is cooking, place all ingredients for the pineapple salsa in a bowl and toss. Do the same with the ingredients for the white bean-arugula salad. When the fish is cooked, place a piece of banana leaf on the plate. Place fish on top of banana leaf and top with pineapple salsa. Place white bean-arugula salad on plate next to fish, and garnish with a grilled lemon.
