  • Firecracker Chicken


12 oz. marinated sliced chicken breast
2 tablespoons salad oil
1 teaspoon sesame oil
8 pieces whole dry chili pepper
1 teaspoon ground ginger
1 teaspoon ground garlic
1 teaspoon crushed red chili pepper
1-1/2 teaspoon washed black beans
2 oz. diced red bell pepper
2 oz. yellow bell pepper tri-cut
3 oz. diced yellow onion
1 teaspoon cooking wine
1 tablespoon soy sauce
1 tablespoon cornstarch mix (equal parts cornstarch powder and water)
1/4 cup water

Heat clean wok over a high flame. Add 2 tbsp. salad oil into the wok and heat the oil until hot. Add marinated chicken breast into wok. Stir quickly, separating the meat and then cook for approximately 50 seconds. Remove cooked marinated chicken breast and oil from the wok. Drain well.

Place peppers, onion, ginger, black beans into the heated wok. Stir for 30 seconds. Add cooked marinated chicken breast and the rest of the ingredients. Stir until the sauce boils and thickens. Add 1 teaspoon sesame oil and continue stirring and folding until the ingredients ar thoroughly mixed. Place finished product on a dish and serve.
