Handmade Mozzarella with Heirloom Tomatoes
 
  Ingredients
12 ounces Mozzarella Curd, crumbled
1 - 1 1/2 Heirloom Tomatoes
Bunch Basil
Extra Virgin Olive Oil
Balsamic Vinegar
Kosher Salt
Fresh Ground Pepper

Directions
Bring salted water to a boil. Place curds in colander in pot, when it softens begin to knead cheese, stretching it until it is smooth and shiny. If not serving immediately, place in salted ice water. Plates can be assembled individually or family style. Slice tomatoes and cheese and artfully display on plates. Sprinkle salt and grind pepper and dress with your oil. Balsamic can be puddled on side of plate or if you have a syrup drizzled directly on top for better effect.  Serves 4.
