Ingredients
2 mangoes, small dice
1 medium white onion, small dice
1 lemon, juiced
Kosher salt and white pepper to taste
Pea shoots
Oil for frying
12 large shrimp, peeled and deveined
12 wooden skewers
Cornstarch
1 cup flour
1 egg
1 teaspoon baking powder
1 cup club soda
Directions
In a large bowl, combine the mangoes, onion, lemon juice, and salt and pepper to taste. Set aside. Place a large pot filled with oil on high heat. Skewer the shrimp lengthwise with the wooden skewers. Coat the shrimp in cornstarch and cook them in the hot oil for 1 minute, or until they start to turn pink. Remove the shrimp from the oil and drain them on paper towels. Whisk the flour, egg, baking powder, and club soda in a bowl until it is well combined. Make this batter right before the shrimp are to be fried for the second time and do not over mix the batter. Dip the shrimp in the batter and place them in the hot oil to fry. They should be golden brown and puffy when done, about 1 minute. Drain the finished shrimp on paper towels. Place some of the mango salsa on a plate with some pea shoots on top. Serve with the crispy shrimp skewers. |
