Ingredients
1 tablespoon butter
1/2 small onion, small diced
2 ripe pears, peeled diced
1 bag fresh cranberries
3/4 cup orange juice
1/2 cup brown sugar
1/8 cup port wine
salt & pepper to taste
Directions
Sweat onions in butter over very low heat for 15 to 20 minutes, to begin caramelizing them.
Add pears and sauté for about 2 minutes.
Add cranberries, orange juice, brown sugar and a pinch of salt, simmer until cranberries become soft and pop (about 15 minutes).
Add port wine and simmer 5 minutes longer.
Season to taste with additional salt and pepper. |
