Ingredients
Crab Cakes
1 pound lump crab meat
1/2 cup mayonnaise
1/2 cup roasted red peppers
1 teaspoon yellow mustard
1 cup roasted corn
1/4 cup green onions
1 cup panko bread crumbs
1 whole egg
Additional panko for breading
Red Pepper Mayonnaise
1 cup mayonnaise
1/2 teaspoon garlic
1/2 cup finely minced roasted red peppers
Directions
In a large bowl, combine all ingredients except for the crab and panko.
Gently fold the crab meat into the mixture. Be careful not to break up
the lumps of crab. Add the one cup of panko (you may not need it all).
The cakes will just cling together when the proper amount of panko has
been added. Portion the cakes into a hockey puck shape. Lightly bread
the cakes on both sides with panko, then fry to a golden brown.
As cakes are frying, prepare red pepper mayonnaise by mixing together
all ingredients in a medium-sized bowl. Adjust seasoning with salt and
pepper. Serve alongside crab cakes. |
